Some of you know that before we bought a small travel trailer and started traveling part-time, we used to own a bed and breakfast.

In 2008, we purchased The Featherbed Railroad Bed & Breakfast in Lake County California. While we were shopping for a B&B, we weren’t really planning to leave our little section of the world in Southern California. However, the Featherbed Railroad was just too much fun to resist.

You see, the Featherbed Railroad B&B consisted of nine guest rooms, each of which was in its very own retired railroad caboose. Yep! Nine cabooses, nestled on a lovely green lawn overlooking Clear Lake. And seven of those nine had 2-person jetted tubs right in the room!

Each caboose had a theme, so guests could come back multiple times and stay in different rooms for a different experience each time. Whether they were in the mood for the elegance of the Orient Epress, or a rollicking good time in the New Orleans or Harley Davidson-themed rooms, they could climb up in the cupola with their morning coffee or a book and have a commanding view of the lake.

Other cabooses didn’t have cupolas. Rather, they had “bump outs” on both sides of the railcar, and that made a little extra floor space. The interestingly all had a different layout, though there is a limit to what can be done in a 40-foot by 100-foot box!

In the morning, guests could make coffee in their caboose, then make their way to the main station where we served them breakfast - and more coffee! Our goal was to make hearty, tasty, comfort-food breakfasts to start guests off with full bellies for their day ahead. They might be hiking to the top of Mt. Konocti, or tasting wine at one of the 30 or so wineries in the county, or just lounging by the pool with a good book. Whatever they were doing, they would be fueled for their day.

This was our most popular breakfast when we owned the bed and breakfast. This hearty, warm comfort food makes a great breakfast and is so easy for a crowd, or can be frozen and reheated as desired if you make a big batch you can’t finish.

This baked potato breakfast casserole is an an easy breakfast recipe that can be cooked in a cast iron dutch oven or cast iron frying pan over a campfire or in an RV oven.

Baked Potato Breakfast Casserole

Ingredients:

3 Cups Cubed Potatoes (Russet Preferable)

1/2 Onion

To taste Seasoned Salt and Garlic Posder

1/2 Stick Butter

6 Large Eggs

1 1/2 Cup Heavy Cream

1/4 tsp Black Pepper

1/2 Bunch Green Onions

1 Cup Diced Ham

1 Cup Cheddar Cheese

1 Cup Pepper Jack Cheese

Step One - the Potato

  • Toss the Cheese and Set Aside

  • Pre-Heat the Oven to 450°.
    While the oven is heating put butter into a Pyrex dish and melt it.

  • Cube potatoes and onions.
    Thoroughly dry the potatoes and onions with a towel.

  • Season the potatoes with garlic powder and seasoning salt.

  • Roast potatoes for about 12-15 minutes.

    Step Two - the Filling

  • Mix the eggs, green onions and the cream. Mix in the pepper.

  • Put the chopped ham onto the potatoes. Pour the egg mixture on top of the ham. Sprinkle the cheese on top of it all.

  • Bake the second round at 350° for 30 minutes.

  • This is great with sun dried tomato sour cream sauce.
