Three-Ingredient Peanut Butter Cookies

Peanut butter is one of our favorite things in the StressLess kitchen. We eat it in sandwiches, on toast, in oatmeal, and it’s even a secret ingredient in Tony’s famous chili (oops, I guess it’s not much of a secret any more!).

We also like to have cookies in camp, along with an extra couple of camp chairs, so we can invite new friends to sit a spell and enjoy a snack. 

Tony recently saw a recipe for peanut butter cookies that require only three ingredients. Really!

We did not have high expectations for these cookies. Surely the texture could not be right, right?

Well, we were wrong. Peggy whipped these up and we tested them and - y’all, these are cookies! We wouldn’t guess that they were anything other than the traditional cookie with flour and baking powder and all that stuff!

This recipe made 16 cookies, using the medium Pampered Chef scoop (2 tablespoons). The cookies are about 2.5 inches in diameter. They are sort of high in calories because essentially it’s peanut butter and sugar! But dang, are they good!

This is such a great recipe for the RV oven. There is not a lot of mess, only one measuring cup, and it’s so so easy. And if you are boondocking, just plug the mixer into the Jackery for a few minutes for the minimal needed electricity! I suppose a non-electric mixer would work as well, but Peggy is a bit spoiled.

Ingredients

1 Cup Sugar

1 Cup Peanut Butter

1 Egg

3 ingredients - 3 steps!

Mix all three ingredients together

  1. Roll into balls and smash with a fork

  2. Bake at 350 for about 12 minutes
