Wild Rice, Chicken, and Sausage

This week’s recipe comes to us from our friend Patty, who we met at the Mini Lite Rally in Texas in April. Of course there was a potluck and of course I found a dish that needed repeating, and so I asked Patty to share her recipe. She kindly shared, and I am here to share it with you now.

For this recipe, I cooked all the meat at home before the trip. I cut up all the chicken, and I put all the meat together in a container until we were ready for our meal.

The term hot dish, or hotdish, comes mainly from Minnesota and the upper midwest. Being from the opposite corner of the country, I grew up calling such a dish a casserole. According to Google, hotdish is defined a main dish that contains a starch, a protein, and a vegetable. Whatever you call it, nothing beats a comfort-food casserole bursting with belly-filling, heart-warming goodness.

Patty’s Wild Rice Hot Dish with Chicken and Sausage

The ingredients:

2 cups Chicken, cooked and cubed

1 pound Sage-seasoned ground sausage

1 box Ben’s Long Grain and Wild Rice

1 can Cream of Mushroom Soup

1 small can Mushroom pieces and stems (4 ounce)

Prepare the Parts

  • Cook chicken and cut into bite-size pieces. Set aside.

  • Cook sausage and drain. Set aside.

  • Prepare Ben's original long grain & wild rice with herbs and seasonings per package instructions.

Prepare for Cooking

  • Pre-heat oven to 350 degrees

  • Butter a casserole dish or cast iron skillet

Prepare to Bake

  • Mix together chicken, sausage, prepared rice, soup, and drained mushrooms.

  • Bake 350 degrees 20 minutes, or until heated thru.

Prepare to Enjoy!
