A fast, easy meal idea for summer in camp

Looking for an easy, filling and delicious recipe you can make in your RV? This salad is actually a meal in itself and one of our favorite summer time treats. It’s also so easy that it’s perfect for that dinner idea as you arrive in camp and just don’t want to cook anything after a long day of travel.

What we like about it is you can make it with just canned and refrigerated ingredients and not have to do much more than open a container. But it’s also easy to switch up to your taste or even different tastes among your crew.

The protein in this salad idea is chicken and we have been known to simply crack open a can of Costco chicken, pour on some Frank’s Red Hot and call it done. Then we toss in some blue cheese, walnuts, blueberries and lettuce. I like a creamy dressing like poppyseed peach dressing but Tony just puts balsamic vinegar on his.

We’ve also used chicken we’ve grilled or one of those hot grocery store chickens. We love those things.

The original idea came from a brew pub we loved, which has since closed, and they used candied walnuts instead of just plain ones. Tony likes this salad with blueberries, but I prefer craisins. It’s so easy to switch things up on this and so fast to make it that it’s the perfect way to arrive in camp and have a meal ready in under five minutes that has some spice, some nice and a lot of summer color and flavor.
