You know how much i love a potluck, and this brunch recipe I learned from Micki is so delicious! I don’t know if i can ever make anything else. Well, unless Micki is making it.
I made this casserole for the brunch potluck at Romp it Up, a music festival hosted by The Border Hookups. Dave and Jacqueline put on quite a party and we have thoroughly enjoyed the two times we have attended!

RV Baking tips
I set the oven to 350 but I don’t pay much attention to the actual temperature. With this casserole, it’s just important to get the egg cooked and the cheese melted. When you bake in an RV oven you need to pay a bit more attention and be patient!
