There is nothing quite as satisfying as a hot bowl of creamy soup.
I made this soup for the Friendsgiving potluck. On a cool fall day, this hot creamy soup really hit the spot.
Decorated with a drizzle of coconut milk and sage leaves, the presentation was as good as the taste!
RV Baking tips
The squash was roasted before scooping out into the soup pot. With RV ovens needing some extra time and attention, my squash didn’t get quite as soft as I would have liked. I learned in that moment that the skin is edible, and I gave in and threw everything into the pot.
