Make-ahead crowd pleasing sausage gravy breakfast casserole recipe

This sausage mushroom gravy casserole breakfast recipe was something we made frequently when we had the bed & breakfast. It’s easy to prepare in a cast iron dutch oven or cast iron frying pan over a campfire or you can make it ahead and cook it up in your RV’s oven - even a shallow RV oven!

Ingredients

2lbs bulk sausage

8 large eggs

1lb grated cheddar cheese

2 cans cream of mushroom soup

10 slices sourdough bread - (you can also substitute stuffing mix for the bread)

2 cups milk

Preparation

  1. grease a standard 9X12 pan

  2. cube the bread, layer in the pan

  3. mix the eggs and milk - set aside

  4. brown the sausage (with rosemary - that rocks!) and drain excess grease
    spread the sausage over the cubed bread

  5. pour the egg and milk mixture over the sausage and bread

  6. spread the soup over the whole thing

  7. sprinkle the grated cheese over the top

  8. bake the whole thing at 350° for an hour. Let sit for 20 minutes - then serve.
